Easter Eggs, Easter Eggs and More Easter Eggs, Oh My!

Here is the scenario that is getting ready to happen in thousands of homes in the next week:

The bunny is coming to visit your kids and you need to get ready. Their faces are shining and they are filled with glee. Being the super Mom, Aunt, or Grandma you decide to dye eggs, lots of them. Easter dawns bringing joy and happiness to the children, eggs are hidden and hunted, and the day is amazing for all. All to soon Monday appears and you are left with one thought. It is not the memories of the day before or even about how you are running late for work, again. It is just one fleeting thought that can deflate you in mere seconds “What on earth am I going to do with all these eggs?”

Most of us have been there. When my daughters were old enough to understand Easter I went crazy Suzy Homemaker. I dyed 2 dozen eggs, never once thinking about after Easter. Sure you can dice them up, throw them in a bowl, add a little mayo, salt, pepper and eat egg salad for the week. But I gaurantee by Wednesday you are going to be sick of egg salad. So why not do something unique and delicious with those eggs?

Boiling An Egg:

Before we get started on what to do with your Easter left over eggs, lets talk about boiling eggs. Boiling eggs can be a hit or miss project. Sometimes they are underdone, sometimes they are over cooked, and other times they are perfect. Everybody and their Aunt Sally has a method for boiling eggs, some work, some don’t. I don’t really have a method that is my own. I learned the perfect way on Youtube. I wanted to share the video with you because it really does work and it makes boiling and peeling eggs so much easier!
