5 Amazing Picnic Recipes


Are you tired of winter yet? I am! It is getting colder here and tonight there is talk of snow! Of course, we couldn’t get snow during Christmas. It has to snow when we don’t want it to! All I can do is dream of spring, getting in the car with the windows rolled down, and taking off for a picnic in one of our amazing parks!

If you are going on a picnic you need a couple of things!

  • A blanket
  • Plates, napkins, and silverware
  • Amazing food!

I have you covered in the food department and have found 5 of the best picnic recipes out there! Any of these are sure to please and will make your picnic extra special. So leave all the cold and snow behind and dream a little with me!

  1. Sweet BBQ Chicken Sliders– These are perfect for a picnic because not only do they taste great but they scream spring and summer! So even if you don’t live in the BBQ capitol of the world, you can feel like you do!
  2. Tarragon Chicken Salad– Whether it is served on rolls or in a lettuce cup, this chicken salad is sure to please! It would give any food truck a run for its money!
  3. Classic Southern Fried Chicken– Nothing screams picnic like fried chicken! Sure you could stop at KFC on your way there but why? You can make beautiful, golden, delicious chicken at home! You can even serve it the way my Grandmother did. Cold with a glass of ice-cold lemonade. Nothing beats that on a spring day!
  4. Mediterranean Pasta Salad– You can’t have a picnic without an amazing pasta salad. This is BIG step up from Macaroni salad!
  5. Pinata Cupcakes– You can’t have all this amazing food without dessert! You need something easy and portable. These Pinata Cupcakes are easy to make with a fun surprise in the middle! It is sure to make your picnic extra fun!

I really wish I could say that it is so cold here that I needed a bite of summer so I made this Slow Cooker Berry Cobbler With Whipped Sour Cream Topping. That would be a lie though. I made it because it is still warm here and it made me think of berries. It is so hard to get into the Christmas spirit when it is 70 degrees outside. I don’t know how people in Florida and California do it. I so much want the feel and smells of winter.

But hey! My loss is your gain. I made this the other day and it was gone in a flash. It is a perfect dessert for the slow cooker because it makes the house smell wonderful!

Slow Cooker Berry Cobbler With Whipped Sour Cream Topping

  • 1-1/4 cups all-purpose flour, divided
  • 2 tablespoons plus 1 cup sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 egg, lightly beaten
  • 1/4 cup fat-free milk
  • 2 tablespoons canola oil
  • 1/8 teaspoon salt
  • 2 cups fresh or frozen raspberries, thawed
  • 2 cups fresh or frozen blueberries, thawed[br][br]
  • Whipped Sour Cream
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 2 tablespoons confectioners’ sugar
  1. In a large bowl, combine 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. Combine the egg, milk and oil; stir into dry ingredients just until moistened (batter will be thick). Spread batter evenly into a 5-qt. slow cooker coated with cooking spray.
  2. In a large bowl, combine the salt and remaining flour and sugar; add berries and toss to coat. Spread over batter.
  3. Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into cobbler comes out clean.[br][br]
Whipped Sour Cream
  1. Combine the heavy cream, sour cream and confectioners’ sugar in a medium bowl and beat with an electric mixture until the mixture forms medium peaks.
  2. Spoon the cobbler into bowls and top with the whipped sour cream topping.

Easy Slow Cooker Bacon Macaroni and Cheese

In the  winter my slow cooker gets a workout. There is just something warm and comforting about putting a meal together and having it simmering all day long. If you haven’t yet, you should totally check out my December slow cooker menu. While I mostly make full dinners in the slow cooker, I sometimes make just a side dish. Like my Easy Slow Cooker Bacon Macaroni and Cheese. It is like the best of both worlds. Bacon and Macaroni and Cheese. In all honesty, you could make this your meal. It is that rich and satisfying.


I have made this on the stovetop and it is easy to make that way too but for some reason it just tastes more flavorful and creamy in the slow cooker. I use the best cheeses and cook my bacon fresh even though you could totally use bacon bits. The Worcestershire sauce adds just enough kick to really bring out the flavor in the sauce. Once you make it you may find it hard to go back to regular macaroni and cheese. Easy Bacon Macaroni and Cheese will be your go-to. Oh and if you make this expect a repeat performance next year. Everyone will want you to make it again!

Just a couple of notes before we get started:

  • Slow cookers vary in cooking times. If you have an older slow cooker you may need to adjust the time a little.
  • You should put enough milk to cover the pasta. I use around 2 cups but you may need more or less. Use your best judgement.
  • Don’t skimp on the cheese. Buy the best you can find or even better, grate it yourself if you want.

This ooey gooey Easy Slow Cooker Bacon Macaroni and Cheese will become your favorite side dish! Just don’t forget to share!
  • 3 cups pasta
  • 2 cups of mozzarella
  • 2 cups cheddar cheeses
  • 10 slices of bacon, cooked and crumbled. Or bacon bits of your choice.
  • 2 eggs, beaten
  • 1 can of evaporated milk
  • 2 cups whole milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Worcestershire sauce
  1. Spray the bottom and sides of your slow cooker insert
  2. In a small bow combine your milks and whisk. Add all the other ingredients and stir to combine. Make sure you have enough milk to cover the pasta.
  3. Add to your slow cooker and cover.
  4. Cook on high for 1 1/2 hours stirring occasionally. Place the setting on low and cook for an additional 15 to 30 minutes or until all the liquid has absorbed.

On the weekends I like to sleep in. All week I have done chores and cooked many meals. When Saturday rolls around I would like to have an extra couple hours of sleep please! But I don’t want my girls starving either. So I taught them this easy Cheesy Sausage and Hash Brown casserole. It is a great starter recipe that teaches two types of cooking. Skillet and Oven. I would DEFINITELY suggest supervising them the first couple of times to avoid burned humans and food.

When it comes to sausage, which can be full of fillers if you are not careful, I try to the buy the best. I really love Johsonville’s Naturals Link Sausage. The are made with 100% natural ingredients and don’t have any fillers. Plus they taste amazing!

Just to be totally transparent- Johnsonville paid for this post. However, all opinions are my own and this really is a recipe I taught my girls 🙂

Cheesy Sausage and Hash Brown Casserole

***I am a moron and forgot to take a picture of the hash browns. I tell you in the instructions where to add them :)***


  • 1 Package of Johnsonville Naturals Sausage Links, cut up
  • 1 large onion diced
  • 2 cups of shredded sharp cheddar cheese, divided
  • 1 package of Simply Potatoes Shredded hash browns
  • 1 cup of milk


Heat oven to 400 degrees. Lightly spray a large baking dish.

Step 1- Cut up sausage into chunks.


Step 2- Cook sausage until it is just getting brown.


Step 3- Add onions and saute until the sausage is cooked through and the onions are nice and brown.


Step 4-  Add your 1 cup of milk and cook for a few minutes longer. ( I would say about 3 or 4 minutes but use your own judgement.)


Step 5- Add your hash browns and 1 cup of cheese. Mix it together until all the ingredients are distributed evenly. Cook for 5 minutes.


Step 6- Add mixture to your casserole dish. Add the remaining cheese to the top. Bake at 400 degrees for 25 to 30 minutes. The cheese will be nice and crusty while the casserole will be hot and bubbly.


This super simple dish will be a great way for your teens to learn to cook, impress their friends, and even be a comfort dish when they go off to college!
